Oatmeal Raisin Cookies

16110167_615104238689669_3482395320803917824_nThese Oatmeal Raisin Cookies are a variation of Betty Crocker’s Oatmeal Raisin Cookies with a twist. The trick is making sure you cook them just the right amount, so they are golden on the bottom. Otherwise, they will fall apart and you will have a huge mess. Enjoy!


1 cup raisins

1 cup hot water

¾ cup melted butter

1 ½ cup organic sugar

2 eggs

1 tsp vanilla

2 ½ cups flour

1 tsp baking soda

½ tsp baking powder

1 tsp salt

1 tsp cinnamon

2 cups rolled oats

½ cup chopped walnuts


Soak raisins in a bowl with hot water.

Heat oven to 400°

Mix melted butter, sugar, eggs, and vanilla.

Stir together flour, spices, salt, baking powder, and baking soda.

Mix dry ingredients with wet ingredients.

Add oats, nuts, and raisins.

Drop dough onto baking sheets covered with non-stick silpat.

Bake 7 minutes until golden brown on the bottoms.
